Ingredients
- 3 Mozzarella (à 125 g)
- 1 Egg
- 2 tbsp flour
- 4 Tbsp breadcrumbs
- 2 tbsp olive oil
- 400 g cherry tomatoes
- 3 Spring onions
- 2 tbsp olive oil
- salt
- Pepper (from the grinder)
- 2 tbsp basil
Instructions

Wash tomatoes, halve or quarter them. Wash spring onions, trim and cut into rings. Briefly sauté both in hot olive oil, season with salt and pepper, and fold in basil.

Beat the egg in a shallow dish. Place flour and breadcrumbs on separate dishes. Drain mozzarella well and slice into thicker pieces. Coat slices first in flour, then in egg, and finally in breadcrumbs. Heat oil in a heavy skillet and fry the mozzarella slices over medium heat until golden brown.
