Ingredients

  • 200 g Galia melon (flesh)
  • juice of half a lemon
  • 1 tbsp Olive Oil
  • 2 tbsp mixed finely sliced herbs (e.g., mint, basil, lemon balm)
  • Salt
  • colored pepper
  • 100 g rye bread with seeds (4 slices)
  • 200 g Goat cheese
  • 1 Banana

Instructions

    Slice melon and banana into thin rounds. Whisk lemon juice with olive oil, herbs, a pinch of salt and pepper.

    Halve the bread slices. Carefully cut the goat cheese into thin slices.

    Top four halves of bread with melon and banana slices and goat cheese, drizzling the herb vinaigrette over them. Cover with the remaining bread slices.
