Ingredients
- 1 rabbit (ca. 1.6 kg)
- 2 tbsp butter
- 3 tbsp olive oil
- Salt
- Pepper
- 300 g small onions
- 3 Garlic cloves
- 250 ml meat broth
- 125 g whipping cream
- 1 sprig rosemary
- 1 bay leaf
Instructions

Wash the rabbit, pat dry and cut into 8 portions. Heat butter and olive oil in a roasting pan and sear each portion on all sides until golden.

Peel onions and garlic. Remove rabbit pieces from the pan and sauté onions and garlic in the drippings; season rabbit with salt and pepper and return to the pan.

Pour in meat broth and cream, add rosemary sprig and bay leaf, then cover and braise in the oven at 220°C.

After 20 minutes reduce heat to 180°C, remove the lid, continue cooking for a total of 45 minutes, basting the rabbit pieces with sauce every now and then. Serve the braised rabbit.
