Italian-Style Braised Chicken Pieces

Ingredients
- 1 chicken
- 3 tbsp olive oil
- 3 bell peppers (one red, one yellow, one green)
- 1 onion
- 2 Garlic cloves
- 4 tomatoes
- 1 rosemary sprig
- 4 thyme sprigs
- 2 anchovy fillets
- 1 tbsp capers
- 50 g green olives (pitted)
- 150 ml white wine
- Sea salt
- chili peppers
- basil (chopped, for garnish)
Instructions

Wash the chicken, pat dry and cut into 8 pieces.

Wash the bell peppers, halve them, clean and roughly dice them.

Peel and dice the onion and garlic.

Heat water to blanch tomatoes, cool, peel, quarter and seed them.

Season the chicken pieces with salt and pepper, brown them in hot oil in a pot, then remove from the pot. Add the peppers, onions, garlic, rosemary, thyme and a pinch of chili to the pot and sauté briefly. Deglaze with white wine, add anchovies, capers, tomatoes and olives, then return the chicken pieces to the pot. Cover and simmer over low heat for about 45 minutes, stirring occasionally and adding more wine if needed. Finally season with salt and chili, sprinkle basil on top and serve.
