Blueberry Muffin

Ingredients
- 250 g flour
- 200 g Blueberries
- 2 oranges (unprocessed)
- 1 pinch salt
- 1.5 tsp Baking Powder
- 100 g brown sugar
- 1 egg
- 6 tbsp sunflower oil
- butter (for greasing)
Instructions

Preheat the oven to 180°C.

Wash the oranges and grate ½ tbsp orange zest.

Halve all oranges, squeeze out the juice, measure 250 ml.

Sift the flour into a bowl, mix in baking powder and sugar.

Beat the egg in a bowl, add the orange zest and oil, whisk until frothy.

Strain the juice through a fine sieve, add to the mixture and fold gently.

Stir the liquid quickly with a wooden spoon, smooth out.

If the batter is too thick, add more orange juice and stir until the right consistency.

Gently fold in the washed blueberries.

Grease a muffin tin or line with paper cups, distribute batter evenly into 12 cavities.

Bake in the preheated oven at 180°C for about 30 minutes until golden yellow; test with a toothpick, then cool on a wire rack.
