Quark Plum Casserole

Ingredients
- 500 g plums
- 3 eggs
- Salt
- 400 g low‑fat quark
- 2 Tbsp softened butter
- 75 g sugar
- 2 tbsp vanilla sugar
- 2 tbsp Cornstarch
- 5 tbsp orange juice
- 2 slices of old‑fashioned braided bread loaf (~120 g)

Preheat the oven to 180°C fan. Wash, halve and pit the plums. Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. In a bowl whisk the yolks with quark, 1 tbsp butter, sugar, vanilla sugar, cornstarch and orange juice until frothy. Gently fold in the meringue.

Cut the bread loaf into slices or cubes. Grease a tall, round baking dish (22 cm diameter) with the remaining butter. Line the bottom of the dish with bread. Pour half of the quark mixture over it. Arrange plums on top and around the edges, then pour the remaining quark mixture into the dish.

Bake in the oven for about 40 minutes until golden brown. After roughly 25 minutes cover with foil to prevent the surface from darkening too much. Serve warm.
