Ingredients
- 1 Lime
- 100 ml blackberry juice
- 250 g quark (20% fat in cream)
- 400 g blackberries
- 1 sprig lemon thyme
- crushed ice
Instructions

Cut the lime in half and squeeze out the juice. Mix the blackberry and lime juices with the quark. Wash, dry, and crumble the thyme leaves into a bowl. Rinse and pat dry 300 g of blackberries. Stir the berries and thyme into the quark mixture.

Fill the mixture into eight ice molds and freeze for about 1 hour. Insert wooden sticks and continue freezing for another 3 hours.

Before serving rinse any remaining blackberries. Release the ice from the molds, place on crushed ice, and garnish with fresh blackberries.
