Nut Rolls with Apple

Ingredients
- 250 g flour
- 3 EL butter
- 125 ml milk
- 2 EL sugar
- 20 g fresh yeast (0.5 cube)
- 1 egg yolk
- flour (for working surface)
- baking paper
- 400 g apples
- 3 EL Sugar
- 1 TL cinnamon
- 30 g nuts
- 3 EL butter
Instructions

Whisk the milk with 1 EL sugar and the yeast until smooth. In a bowl combine flour, butter, remaining sugar and egg yolk; pour in the yeasted milk and knead into a smooth dough using the mixer’s dough hooks. Cover and let rise in a warm place for about 45 minutes.

Peel, quarter, core and finely chop the apples. Heat 3 EL water and steam the apples over medium heat for 3–4 minutes. Sweeten with 2 EL sugar and allow to cool.

Knead the dough on a lightly floured surface and roll into a rectangle about 20 × 30 cm. Mix 1 EL sugar, cinnamon and nuts; sprinkle over the dough and spread the apples. Roll up from the long side and cut into six slices. Place on a baking sheet lined with paper, cover and let rise for another 20 minutes. Melt the remaining butter; brush the rolls with it and bake in a preheated oven at 200 °C (middle rack) for about 25 minutes.
