Ingredients

  • 250 g flour
  • 1 egg
  • 125 g butter (in small cubes)
  • 70 g sugar
  • 1 pinch salt
  • 1 packet vanilla sugar
  • 50 g sugar
  • 150 g finely chopped hazelnut kernels
  • 25 g marzipan
  • 1 Egg white
  • 2 egg yolks

Instructions

    Quickly knead the flour with sugar, salt, vanilla sugar, egg and butter cubes into a dough, shape it into a ball and wrap in foil. Chill for 30 minutes.

    For the filling, mix sugar, hazelnuts and egg white with marzipan until smooth.

    Roll the dough on a lightly floured surface to about 4 mm thickness and cut long strips (10–12 cm wide). Place each strip on clear film, spread the marzipan-hazelnut mixture evenly and smooth it out. Roll each strip from the long side using the film, then slice into 4 mm thick rounds with a sharp knife.

    Place the nut cookies on a baking sheet lined with parchment paper, brush with beaten egg yolk and bake at 180 °C in a preheated oven for about 12–15 minutes until golden yellow.
