Preserve the fruity delight of the warm season with Spoonsparrow's blackberry jam.

Ingredients

  • 1.5 kg ripe blackberries
  • 0.5 kg 3:1 gelatin sugar
  • 1 Organic lemon
  • 1 tbsp ground cinnamon
  • 3 stems lavender

Instructions

    Sort, wash and drain the blackberries well. Rinse the lemon hot, dry rub and grate the zest. Then cut in half and squeeze out the juice.

    Mix the blackberries, lemon zest, juice and lavender buds with gelatin sugar and cinnamon and let steep for 2 hours.

    Add the mixture to a pot, heat slowly and simmer for about 4 minutes until bubbling. Transfer to clean canning jars, seal tightly and place upside down for 10 minutes to create a vacuum. Flip back over and allow to cool.
