Ingredients

  • 1 kg apricots
  • 1 Organic lemon
  • 500 g red currants
  • 0.5 kg gelée sugar (3:1 raw cane sugar)

Instructions

    Clean and wash the apricots, halve them, remove pits, and dice the flesh finely. Rinse the lemon hot, dry it, grate the zest, and squeeze out the juice.

    Combine the apricots with lemon juice and zest in a pot. Add the gelée sugar and cook over medium heat for about 5 minutes while stirring.

    Meanwhile, rinse the currants, strip them from their stems, wash, add to the apricots, and simmer for 1 minute. While still hot, pour into clean jars, seal tightly, place the lids on top for 10 minutes, then flip and let cool completely.
