Mirabelle Apple Jam
Mirabelle apple jam from Spoonsparrow tastes not only good for breakfast!
Ingredients
- 3 sprigs lemon thyme
- 1 kg ripe mirabelles
- 2 Organic lemons
- 100 g coconut palm sugar
- 250 ml apple juice
- 10 g pectin

First sterilize jars and lids by boiling them in a large pot of hot water for about 10 minutes. Then remove the jars from the water and turn them over onto clean kitchen towels to cool.

Meanwhile wash and pat dry the lemon thyme. Wash, pit and chop the mirabelles. Rinse the lemons hot, pat dry and zest into very fine strips. Cut the lemons in half and squeeze out the juice. Add thyme, mirabelles, lemon zest and juice, 90 g coconut palm sugar, apple juice and 250 ml water to a pot. Cook bubbling for 3 minutes while stirring.

Remove the thyme. Mix pectin with the remaining coconut palm sugar and stir it slowly into the fruit mixture. Boil for another minute. Fill the clean canning jars to the brim and seal immediately. Place the jars upside down for 10 minutes, then turn them right side up and let cool.
