Biscuit Roll with Bananas

Ingredients
- 4 eggs (separated)
- 5 tbsp water
- 100 g sugar
- 1 packet vanilla sugar
- 100 g flour
- 50 g starch
- 1 tsp Baking powder
- 600 g whipping cream
- 70 g sugar
- 1 packet vanilla sugar
- 1 packet stabilizer
- 4 straight bananas
- chocolate shavings
Instructions

Whisk the yolks with half of the sugar and the vanilla sugar until fluffy.

Beat the whites into stiff peaks, adding the remaining sugar before they become fully set; continue whisking until the meringue is firm.

Fold the meringue into the yolk mixture using a spoon.

Sift the flour and starch over the egg mixture and fold in; spread evenly onto a parchment-lined tray and bake at 175°C for about 12–15 minutes. Immediately after baking, transfer the finished dough onto a sugar‑dusted kitchen towel, remove the parchment, roll with the towel, and let cool.

Beat the cream with sugar, vanilla sugar, and stabilizer until stiff.

Peel the bananas; if necessary, press them slightly to straighten.

Unroll the cooled roll from the towel, spread half of the whipped cream over it, arrange the bananas along both long sides, and roll the dough back toward the center using the towel. Fill the resulting middle slit with the remaining cream and coat the banana roll. Optionally decorate with a ring mold and drizzle additional cream. Serve topped with chocolate shavings.
