Petit Fours

Ingredients
- 75 g flour
- 50 g cornstarch
- 50 g grated almond kernels
- 50 g butter
- 5 eggs
- 150 g sugar
- 400 g marzipan base
- 4 tbsp rum
- 400 g apricot jam
- 400 g powdered sugar
- 0.125 l water
- red food coloring
- 50 g dark chocolate
- sugar pearls
- 0.5 pistachio (for garnish)

Separate the eggs, beat the yolks and sugar until fluffy, then fold in butter and whipped egg whites, flour, cornstarch and almonds. Spread the dough finger‑thick onto a baking tray lined with parchment paper, bake for 12 minutes at 200°C. Transfer the sponge to a cooling rack, remove the parchment immediately, and let it cool for 2 hours. Boil the jam while stirring, strain through a sieve. Cut the sponge first across, then both halves lengthwise. Spread jam on all pieces, cube the marzipan, mix with rum, spread over the jam. Stack the layers and cut out hearts and circles.

Warm water for the glaze, dissolve powdered sugar in it while stirring, tint part of it pink with food coloring, coat the hearts, use white glaze for the circles. Let cool well. Melt chocolate in a double boiler, decorate the petit fours with it, garnish with sugar pearls and pistachios.
