Petit Fours

Ingredients
- 75 g flour
- 50 g cornstarch
- 50 g grated almonds
- 50 g butter
- 5 eggs
- 150 g sugar
- 200 g marzipan paste
- 4 tbsp rum
- 100 g apricot jam
- 300 g powdered sugar
- 0.125 l water
- food coloring
- sugar pearls

Separate the eggs, beat the yolks with sugar until fluffy, then fold in the butter and whipped egg whites, flour, cornstarch, and almonds. Spread the dough finger‑thick onto a baking sheet lined with parchment paper and bake for 12 minutes at 200°C. Let the sponge cool on a wire rack; remove the parchment immediately and let it rest for 2 hours. Boil the jam while stirring, strain through a sieve. Cut the sponge first crosswise, then both halves lengthwise. Spread jam on all pieces, cube the marzipan, mix with rum, spread over the jam. Stack the layers and cut out hearts, squares, and circles.

Warm water for the glaze, dissolve powdered sugar in it while stirring, set aside a portion, color the rest lightly with food coloring, coat the Petit Fours with this glaze. Allow to dry well.

Decorate the Petit Fours with the light glaze using a small piping tip and garnish with sugar pearls.
