Berry Rice Pudding

- 1 Vanilla bean
- 1 untreated lemon
- 600 ml Milk
- 60 g sugar
- 250 g rice pudding grains
- 500 g mixed berries (e.g., currants, blueberries, raspberries)
- 150 ml red fruit juice (e.g., grape, cherry)
- 20 g butter

Split the vanilla bean lengthwise and scrape out the seeds. Wash the lemon hot, dry it, and cut a thin strip of zest. Add the vanilla seeds, the pod, the zest, and 40 g sugar to the milk and bring to a boil. Sprinkle in the rice, lower the heat, cover, and let simmer for about 35 minutes until softened.

Meanwhile, squeeze the lemon. Wash, sort, and pat the berries dry. Heat the juice with the remaining sugar, add the berries, and simmer gently for about 3 minutes until tender. Add more sugar if desired to taste. Melt the butter and stir in the lemon juice.

Remove the vanilla pod and zest. Spoon the rice pudding into small bowls or cups. Top with berries and drizzle with the lemon‑butter sauce. Serve immediately.
