Ingredients

  • 2 Eggs
  • 75 ml milk
  • 1 clove garlic, finely chopped
  • 3 anchovies, finely chopped
  • 100 g flour
  • oil (for muffin tin)
  • 4 slices pink roast beef
  • 12 tsp cream horseradish
  • Salt
  • Pepper (freshly ground)
  • 0.5 bunch Basil

Instructions

    Preheat the oven to 200°C fan for about 5 minutes.

    Beat eggs with milk, 75 ml water, garlic, anchovies, salt and pepper until smooth, then whisk in flour to make a smooth batter.

    Oil a muffin tin and heat it in the oven for about 5 minutes before pouring in the batter; bake for approximately 15 minutes until golden brown.

    Let cool and remove from the tin. Place one teaspoon of cream horseradish into each pudding and top with finely sliced roast beef strips. Sprinkle with very finely chopped basil and freshly ground pepper before serving.
