Ingredients
- 2 egg whites
- 1 packet Bourbon vanilla sugar
- 4 egg yolks
- 2 tbsp sugar
- 2 tbsp ground hazelnuts
- 250 g quark (Topfen)
- 1 untreated lemon (juice and zest)
- 500 g mixed berries (e.g., raspberries, blackberries, gooseberries)
- butter (for the dish)
Instructions

Beat the egg whites until stiff peaks form, allowing the vanilla sugar to dissolve.

Whisk together the egg yolks with sugar, nuts, quark, lemon zest and juice until smooth, then gently fold in the beaten egg whites.

Pour the quark mixture into a butter‑lined baking dish.

Wash, dry and pat the berries, then spread them over the quark layer. Bake in a preheated convection oven at 180°C for about 30 minutes, then serve immediately from the dish.
