Ingredients

  • 120 g flour
  • 1 tsp Baking powder
  • a pinch of salt
  • 6 Eggs
  • 250 g sugar
  • baking paper (for the tray)
  • sugar (for working)
  • 200 g strawberries
  • 100 g sugar
  • 4 tbsp Lemon juice
  • 250 g whipping cream
  • 2 packets stabilizer
  • 1 packet vanilla sugar
  • powdered sugar (for dusting)

Instructions

    Combine flour, baking powder and a pinch of salt. Separate the eggs. Beat egg whites until stiff, gradually adding sugar. Fold in yolks. Sift the dry mixture over and gently fold into the batter. Spread the dough onto a tray lined with baking paper. Bake in a preheated oven at 180 °C (convection) for 15–20 minutes. Transfer to a kitchen towel dusted with sugar, remove the baking paper, and roll up using the towel; let cool.

    Wash and trim strawberries. Cut into small pieces and mix with sugar and lemon juice. Whip cream with vanilla sugar and stabilizer until stiff, then fold in strawberries.

    Carefully roll the dough base, spread with strawberry cream, and re-roll. Chill for at least 3 hours. Dust with powdered sugar before serving.
