Ingredients

  • 2 Spring Onions
  • 1 bundle parsley
  • 1 bundle arugula
  • 4 schnitzels (veal or turkey)
  • Salt
  • Pepper
  • flour (for coating the schnitzels)
  • 2 tbsp oil
  • 100 ml dry white wine
  • 150 g crème fraîche
  • a pinch salt

Instructions

    Clean, wash and finely chop spring onions, arugula, and parsley. Season schnitzels with salt and pepper, then coat lightly in flour. Heat 2 tbsp oil in a pan. Fry the schnitzels over medium heat for 3-4 minutes on each side.

    Remove and keep warm. Deglaze the pan with white wine (or vegetable broth + 2 tbsp lemon juice), whisk in crème fraîche and salt, and reduce for 3 minutes. Add spring onions and herbs, let simmer for 2 minutes.
