Berry Dessert with Meringue Cups

Ingredients

  • 500 g mixed berries (frozen or fresh; e.g., raspberries and blueberries)
  • 1 tbsp Lemon Juice
  • 3 egg whites
  • a pinch of salt
  • 20 g powdered sugar (2 tbsp)

Instructions

    Let the berries thaw or wash and pat dry. Divide among 4 small oven-safe ramekins and drizzle with lemon juice.

    Separate the eggs (reserve yolks for other use). Beat the egg whites, adding a pinch of salt and powdered sugar, until glossy peaks form.

  3. 3.

    Top the berries with the meringue and bake in a preheated oven at 220 °C (fan 200 °C; gas: level 3–4) for 6–8 minutes.
