Berries with Vanilla Cream

- 4 sheets gelatin
- 2 Eggs
- 1 Vanilla bean
- 2 tbsp lemon juice
- 50 g powdered sugar
- 200 g quark
- 100 ml whipping cream
- 350 g mixed berries (strawberries and raspberries)
- 4 tbsp orange juice
- 1 tbsp honey
- lemon thyme
- vanilla beans

Soak gelatin in cold water. Separate the eggs; whisk the yolks with the split vanilla bean, lemon juice, and powdered sugar over a double boiler until creamy. Stir in the squeezed gelatin and let it melt. Remove from heat, beat cold, remove the vanilla bean again, and fold in the quark. Whip the cream stiffly and fold it in. Beat the egg whites stiffly and fold them into the mousse. Pour the mousse into a bowl and cover for at least 3 hours in the refrigerator.

Wash or rinse the berries, clean them, and cut strawberries into pieces as desired. Arrange on plates. Mix orange juice with honey and drizzle over the berries. Scoop portions of the mousse onto the berries and garnish with lemon thyme and vanilla before serving.
