Ingredients
- 4 tbsp white wine
- 3 tbsp wine vinegar
- 1 clove of nutmeg
- 3 shallots
- 1 sprig tarragon
- bay leaf
- Salt
- peppercorns
- 2 egg yolks
- 6-10 tbsp butter

Cook the wine, vinegar and spices together and strain through a sieve. After cooling, whisk in the egg yolk and add half of the butter. Whisk vigorously over a bain-marie with a whisk until thick and frothy, gradually adding the remaining butter.
