Ingredients

  • 300 g red currants
  • 1 Shallot
  • 1 unpeeled orange
  • 1 unpeeled lemon
  • 5 tbsp currant jam
  • 1 tsp peppercorns
  • 1 tsp mustard powder
  • 1 tbsp Vegetable oil
  • Worcestershire sauce
  • 20 ml port wine
  • Salt

Instructions

    Wash the currants, strip them from their stems and gently press with a fork.

    Grate some zest from the orange and lemon, then squeeze out the juice.

    Peel and finely chop the shallot. Sauté with crushed peppercorns in hot oil. Deglaze with lemon and orange juice and add the currants. Add jam, grated zest, and mustard powder, and simmer for about 10 minutes until thickened. Remove from heat, season with salt, Worcestershire sauce, and port wine, taste, then let cool.
