Fresh beetroot salad with apple and feta – quick to make, tasty, and perfect for any season!

Ingredients

  • 700 g roasted beetroot
  • 2 stalks celery
  • 80 g arugula
  • 200 g Feta Cheese
  • 1 large apple (e.g., Granny Smith)
  • 1 tbsp Lemon Juice
  • 2 tbsp walnut oil
  • 1 tbsp olive oil (10 ml)
  • 4 tbsp apple cider vinegar
  • Salt
  • 1 tsp maple syrup

Instructions

    Slice the beetroot into thin rounds. Wash, trim, and slice the celery stalks. Rinse the arugula, remove tough stems, and dry thoroughly. Cube the feta cheese. Wash the apple, quarter it, core it, and dice finely. Toss the apple cubes with lemon juice.

    Whisk together the walnut oil, olive oil, apple cider vinegar, lemon juice, salt, and maple syrup; add 1–2 tbsp water if desired for consistency.

    Combine the beetroot, celery, and apple in a bowl, drizzle with the dressing, and toss gently. Sprinkle feta over the top. Arrange the salad on plates topped with arugula and serve immediately.
