Italian-Style Omelette

Ingredients

  • 250 g tomatoes
  • 3 spring onions
  • 2 EL olive oil
  • 8 eggs
  • 4 EL milk
  • 50 g freshly grated Parmesan
  • 1 TL fresh chopped oregano
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Blanch the tomatoes, cool them, peel, quarter, seed and roughly dice. Wash and trim the spring onions, then slice into thin rings. Heat the oil in a pan, sauté the onions until translucent, then add half of the tomatoes.

    Whisk the eggs with milk, stir in parmesan and oregano, season with salt, pepper and nutmeg, then pour half into the pan. Cook over low heat, gently flip when set, and finish cooking. Repeat with remaining ingredients. Cut into pieces before serving.
