Ingredients

  • 400 g pork sausage
  • 200 g bread dumplings (from the day before)
  • 1 sour apple
  • 1 EL lemon juice
  • 100 g radish
  • 1 large red onion
  • 3 EL wine vinegar
  • 5 EL vegetable oil
  • Salt
  • ground pepper

Instructions

    Slice the pork sausage and bread dumplings into thin strips. Wash, quarter, core, and slice or julienne the apple; drizzle immediately with lemon juice. Peel the radish and use a paring knife to cut thin shavings. Slice the onion into rings.

    Mix vinegar and oil for the vinaigrette; season with salt and pepper. Combine sausage, dumpling strips, apple, onion, radish, and vinaigrette; let rest about 20 minutes. Plate and sprinkle with chives before serving.
