Ingredients
- 100 g dark chocolate
- 250 g ground almonds
- 250 g powdered sugar
- 1 tsp cocoa powder
- 0.25 tsp cinnamon powder
- 0.25 tsp clove powder
- 2 egg whites
- 1 pinch salt
- 1 tbsp kirschwasser
- sugar (for working and turning)
- baking paper (for the tray)

Melt the chocolate over a gentle water bath, remove from heat. Mix almonds with powdered sugar, cocoa, and spices. Whisk egg whites with salt until very stiff. Fold the meringue into the almond mixture. Stir in liquid chocolate and kirschwasser. The dough should be firm and workable. Wrap in cling film and refrigerate for 1 hour. Line baking trays with parchment paper. Dust work surface with sugar and roll dough to 1 cm thickness. Cut flower shapes and place on tray. Let dry for 12 hours.

Bake cookies in preheated oven at 200°C for about 8 minutes (they should remain slightly moist inside). Remove from tray, cool. Brush lightly with water, coat in sugar, and let dry.
