Ingredients

  • 125 g soft butter
  • 80 g raw cane sugar
  • 1 ripe banana
  • 1 egg
  • 80 g peanut butter
  • 250 g spelt flour Type 1050
  • 0.5 tsp Baking powder
  • 0.5 tsp vanilla powder
  • 1 pinch salt
  • 100 g roasted unsalted peanuts
  • 100 g dark chocolate chips

Instructions

    Beat butter with sugar until fluffy. Mash banana with a fork and fold in egg and peanut butter. Mix spelt flour, baking powder, vanilla and salt, adding the dry mixture portion by portion. Finally stir in chocolate chips and peanuts. Wrap dough in cling film and chill for at least half an hour.

    Line a baking sheet with parchment paper. Form small balls from the dough, place them spaced apart on the sheet and flatten slightly. Bake banana peanut cookies in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10 minutes.

    Remove cookies from tray and let cool completely. Store airtight until serving.
