Ingredients

  • 500 g ground almonds
  • 5 egg whites
  • 450 g powdered sugar
  • 2 tsp Cinnamon
  • 1 tbsp cocoa powder
  • sugar for dusting the work surface

Instructions

    Beat egg whites until stiff, fold in powdered sugar.

  2. 2.

    Set aside 1 cup of the meringue mixture for glazing.

  3. 3.

    Add almonds, cinnamon and cocoa to the remaining meringue, knead quickly; cover dough and refrigerate about 1 hour.

    Dust a work surface with sugar, roll dough to about 4 mm thick, cut stars of various sizes, coat each with glaze, place on parchment-lined baking sheet and let dry overnight at room temperature.

    Bake the cinnamon stars in a preheated oven at 160 °C for about 8 minutes; they should remain soft inside with a white surface.

    Package the stars as gifts by placing them in a gift box or cookie tin.
