Ingredients

  • 500 g ground almonds
  • 5 egg whites
  • 450 g powdered sugar
  • 2 tsp Cinnamon
  • 20 ml cherry brandy
  • sugar (for the work surface)

Instructions

  1. 1.

Beat the egg whites until stiff, then fold in the powdered sugar.

  2. 2.

Set aside one cup of the meringue for the glaze.

  3. 3.

Add the almonds, cinnamon and cherry brandy to the remaining meringue, quickly knead everything together and cover the dough; refrigerate for about 1 hour.

  4. 4.

Dust a work surface with sugar, roll out the dough to a thickness of about 4 mm, cut out stars in various sizes, coat them evenly with the glaze, place on a baking sheet lined with parchment paper and let dry overnight at room temperature.

  5. 5.

Bake the cinnamon stars in a preheated oven at 160°C for about 8 minutes; they should remain soft inside while the surface stays white.
