Ingredients

  • 1 Banana
  • 100 g fine whole wheat flour
  • 2 tsp Baking powder
  • 250 ml coconut milk (canned)
  • 80 ml sparkling mineral water
  • 1 egg
  • 1 pinch salt
  • 2 tbsp sunflower oil

Instructions

    Peel the banana and slice it thinly. Mix the flour with the baking powder, then whisk in the coconut milk, sparkling water, egg, and salt to form a smooth batter. Add the banana slices and let the batter rest for 5 minutes.

    Heat 1 tsp of oil in a small non‑stick pan (18 cm diameter). Pour a ladleful of batter into the pan and cook each side for 1–2 minutes over medium heat. Use the remaining oil and batter to make seven more thin pancakes. Keep finished pancakes warm in a low oven (70 °C).
