Ingredients
- 600 g pumpkin flesh (with skin, Hokkaido, seeded)
- 2 tbsp olive oil
- 8 garlic cloves (optional)
- 1 small fresh red chili pepper
- 2 Garlic cloves
- 20 g roasted peanuts (coarsely chopped)
- Cayenne pepper
- Salt
- 1 tbsp Lemon Juice
- 0.5 tsp honey
- 2 tbsp olive oil
- cilantro leaves (or parsley flakes)
Instructions

Cut pumpkin into 8 large wedges (do not peel, the skin softens with the flesh), brush with olive oil and bake in a preheated oven at 200°C until the pumpkin is firm yet cooked (about 15–20 minutes). Optionally cook the 8 garlic cloves unpeeled with the pumpkin.

Pit the chili pepper and slice into thin strips. Peel the garlic. Mix lemon juice, a pinch of cayenne pepper, salt, honey, and oil; squeeze in the garlic and combine with chili and peanuts, tasting to adjust seasoning.

To serve, arrange two wedges per plate, place one baked garlic clove on top, drizzle with dressing, and garnish with cilantro.
