Ingredients

  • 30 g ground flaxseed (2 tbsp)
  • 100 g frozen blueberries
  • 6 tbsp melted coconut oil
  • 2 ripe bananas
  • 50 g almond flakes
  • 200 g hearty oatmeal
  • 1 tsp cinnamon
  • 1 tsp Baking powder
  • 225 ml pure blueberry juice

Instructions

    Mix flaxseed with 90 ml warm water and let thicken. Thaw blueberries. Grease a baking dish with 1 tbsp coconut oil.

    Peel bananas and mash with a fork. Reserve 1 tbsp almond flakes and 1 tbsp blueberries for garnish. Mix the rest with oatmeal, mashed bananas, cinnamon, and baking powder. Stir blueberry juice and remaining coconut oil into the thickened flaxseed, then combine the wet mixture with the dry ingredients.

    Fill the prepared dish with the batter and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 45 minutes. Remove from oven, garnish with reserved almond flakes and blueberries, and serve warm.
