Ingredients

  • 4 eggs
  • 4 tbsp Sour cream
  • 50 g shrimp (pre-cooked)
  • 100 g green asparagus tips
  • 2 stalks chervil (leaves)
  • Salt
  • pepper (ground)
  • butter (for the ramekins)
  • chervil leaf

Instructions

    Crack the eggs one by one into butter‑lined ramekins or cups, season with salt and pepper, then add 1 tbsp sour cream to each. Sprinkle shrimp, chopped chervil leaves, and asparagus tips over the tops.

    Place the ramekins in a baking dish filled with boiling water and bake at 220°C for about 8 minutes.

    The whites should be set while the yolks remain slightly runny.

    Garnish with additional chervil leaves and serve immediately.
