Baked Oatmeal

Baked oatmeal is quick to prepare and rich in valuable nutrients. The oats keep you full for a long time and prevent sudden cravings.

Ingredients

  • 200 g rolled oats
  • 1 pinch salt
  • 50 g walnuts (or other nuts)
  • 200 g berries
  • 180 ml oat milk
  • 1 vanilla bean (pulp)
  • 5 g coconut oil (1 tsp; melted)
  • 1 tbsp whole grain sugar
  • 200 g coconut yogurt

Instructions

    Pour 400 ml boiling water over the oats in a bowl. Add a pinch of salt, stir and let soak for 10 minutes.

    Coarsely chop the walnuts and wash the berries. Mix oat milk, vanilla pulp, walnuts, and berries into the soaked oats.

    Grease a baking dish (about 26 x 20 cm) with melted coconut oil and spread the oat-berry mixture inside. Sprinkle whole grain sugar over it and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 20–25 minutes.

    Serve the finished baked oatmeal hot, topped with coconut yogurt and fresh berries if desired.
