- 400 g goat Brie (in 4 pieces)
- 4 yellow cherry tomatoes
- 2 tsp Liquid Honey
- 8 slices baguette
- 2 tbsp olive oil
- Pepper (freshly ground)
- thyme leaves (for sprinkling)
- dried apricots (for serving)

Preheat the oven to 220°C on top heat. Place the Brie pieces on a baking sheet lined with parchment paper. Wash the tomatoes, halve them, and place them cut side up on the tray; drizzle with honey. Lay the baguette slices beside them and drizzle with olive oil. Bake in the oven for about 5 minutes on the highest rack until the bread becomes crisp and the tomatoes lightly caramelize. Remove the cheese immediately once it starts to melt.

Arrange everything together, season the tomatoes with pepper, and sprinkle thyme leaves over the dish. Serve with dried apricots alongside.
