Gebeizter Holunder-Lachs

- 12 juniper berries
- 5 tbsp elderflower syrup
- 1 tbsp salt
- Pepper
- 1 side salmon fillet (with skin)
- tarragon
- 200 g crème fraîche

Finely crush the juniper berries and mix with elderflower syrup, salt, pepper, and the berries. Carefully remove the belly flap and bones from the salmon and cut the fillet crosswise into two halves. Rub both flesh sides generously with the elderflower brine and lay them over each other so that the skin sides face outward.

First wrap firmly in clear plastic, then in aluminum foil, place on a tray, weight it down with canned goods, and marinate in the refrigerator for at least 24 hours. Flip once or twice during this time.

Place the salmon with the skin side up on a board and slice diagonally from the skin into thin slices. Garnish with tarragon and serve with crème fraîche.
