Ingredients
- 18 shrimp (peeled)
- 6 bell peppers (2 red, 2 yellow, 2 green each)
- 1 large onion
- 1 tbsp chopped parsley
- 3 tbsp oil
- Salt
- Pepper
- 2 lemons
- 2 tbsp lemon juice
Instructions

Clean and seed the peppers, cutting them into bite-sized pieces.

Halve the onion crosswise, then quarter lengthwise and separate the layers.

Slice the lemons into rounds and halve them.

Mix parsley with oil, lemon juice, salt, and pepper to make a herb dressing.

Thread 3 shrimp onto each of 6 skewers, placing a half lemon slice at each end.

Alternate pepper and onion pieces on each skewer for color variety.

Brush all skewers with some herb-oil mixture and grill over high heat until cooked through, brushing occasionally.
