Ingredients

  • 2 Eggs
  • 0.5 Vanilla pod
  • 100 g low-fat quark
  • 100 g goat cheese
  • 2 tbsp Maple syrup
  • 1 tsp starch
  • 0.5 tsp organic lemon zest
  • 8 ripe figs

Instructions

    Separate the eggs and beat the whites into stiff peaks. Split the vanilla pod lengthwise and scrape out the seeds. Mix yolks, vanilla seeds, quark, goat cheese, maple syrup, starch, and lemon zest together. Gently fold the beaten whites into the quark mixture. Divide the quark mixture among four small baking dishes.

    Wash the figs, trim the stems, and halve them. Arrange the fig halves on top of the quark mixture. Bake in a preheated oven at 225 °C (fan 200 °C; gas: level 3–4) for about 10–15 minutes.
