Ingredients

  • 1 Charentais melon
  • 3 tbsp liquid honey
  • 1 Lime (juice)
  • 4 50g goat cream cheese balls
  • olive oil
  • pepper (ground)
  • 4 halved lime wedges

Instructions

    Halve the melon, remove seeds. Slice halves into thin strips and peel skin off. Arrange strips fan‑shaped on a plate for decoration. Mix honey with juice of one lime and warm slightly.

    Brush goat cheese with olive oil and sprinkle lightly with ground pepper. Place on parchment‑lined baking sheet and bake under the grill for about 3 minutes until golden brown. Place each piece of goat cheese on a melon plate and drizzle with warm honey sauce. Garnish with lime wedges.
