Baked Peach

Try peach differently with the Spoonsparrow recipe for baked peach!
Ingredients
- 4 peaches
- 125 g walnut kernels
- 3 tbsp liquid honey
- 2 tsp lemon juice
- 1 tsp grated untreated lemon zest
- 2 egg yolks
- 50 g Mascarpone
- butter (for the pan)
- 125 ml port wine
- lemon balm leaf
Instructions

Parboil peaches for a few seconds, shock in cold water, peel, halve and remove pits. Slightly hollow out peach halves and finely chop the flesh.

Set aside 8 walnut kernels for garnish; finely chop the rest of the walnuts. Mix chopped walnuts with chopped peach flesh, honey, lemon juice and zest, egg yolks and mascarpone.

Grease a baking dish with butter and place peach halves cut side up. Spoon some filling onto each half and top with one half walnut kernel. Pour port wine over the peaches and bake in a preheated oven at 200 °C for about 15 minutes.

Remove baked peaches, let cool slightly, then serve garnished with a drizzle of port wine reduction and lemon balm leaves.
