Ingredients
- 500 g Ricotta
- 2 cloves garlic
- 100 g black olives
- 50 g grated Parmesan
- 1 handful chopped herbs (rosemary, thyme, basil)
- 1 splash Lemon juice
- Salt
- Pepper
- 4 tbsp olive oil

Preheat oven to 220°C with fan and top heat.

Drain the ricotta well and place in a bowl. Peel and finely chop the garlic. Drain and chop the olives. Mix both with parmesan and herbs into the ricotta, season with lemon juice, salt, and pepper. Divide the mixture into four shallow, oven‑proof ramekins and drizzle with olive oil. Bake for about 20 minutes.
