Ingredients

  • 60 g Cantal cheese
  • butter
  • 6 large eggs
  • Sea salt
  • freshly ground pepper
  • 2 tbsp heavy cream

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Grate the cheese finely. Butter a baking dish.

    Separate the eggs. Beat the egg whites with a pinch of salt into stiff peaks. Season with pepper, spread in the buttered dish and smooth out.

    Using the back of a spoon press six hollows into the meringue. Slip one yolk into each hollow. Cover the yolks with cream, then sprinkle the grated cheese over the entire surface. Bake on the middle rack for about 10-15 minutes until golden brown.
