Krapfen

Ingredients
- 500 g flour
- 1 cube yeast
- 200 g lukewarm milk
- 50 g sugar
- 5 egg yolks
- 60 g softened butter
- 1 pinch salt
- 1 tsp grated lemon zest
- flour (for dusting the surface)
- jam (optional for filling)
- 1.5 l fat for frying
- powdered sugar (for dusting)
Instructions

Dissolve yeast and sugar in milk, then mix with flour, egg yolks, butter, salt, and lemon zest using a dough hook until a soft dough forms; knead until the dough releases from the bowl. Cover and let rise in a warm place until doubled.

Knead the dough on a floured surface, divide into halves, shape into rolls, cut each roll into six equal pieces, form balls, and let rest for about 30 minutes.

Drop the risen dough portions, fat side down, into hot oil (~180 °C); fry until one side is golden brown, then flip.

Remove the fritters with a slotted spoon, drain on paper towels, let cool slightly, then inject jam using a pastry bag with a long thin nozzle or cake siphon.

Dust the fritters with powdered sugar.
