Ingredients

  • 400 g spinach
  • 1 onion
  • 1 Garlic clove
  • 3 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 300 g tomatoes
  • 300 g Brie cheese
  • 2 baguettes (250 g each)

Instructions

    Wash, rinse and drain the spinach in lightly boiling salted water until wilted; cool under cold running water and squeeze out excess moisture. Peel and dice the onion and garlic, then sauté in 1 tbsp hot oil until fragrant. Gently press the spinach to remove extra liquid, roughly chop, add to the pan and cook briefly with salt, pepper and nutmeg.

    Wash the tomatoes and slice them. Slice the Brie cheese. Cut each baguette crosswise into halves, then cut each half lengthwise. Spread the spinach, tomato slices and cheese on the lower pieces. Drizzle the remaining oil over the top surfaces. Arrange the topped baguettes on a baking sheet and bake in a preheated oven at 200 °C for about 6 minutes; then place the upper halves on top and bake for an additional 2 minutes.
