Ingredients

  • 1 cucumber
  • 1 Red Onion
  • 500 g Greek yogurt
  • 2 Garlic cloves
  • Salt
  • 1 tbsp Olive Oil
  • pepper (ground)
  • 1 tbsp freshly chopped dill
  • 500 g chickpeas (canned)
  • 2 Spring Onions
  • 1 Garlic clove
  • 1 tsp Baking powder
  • 2 tbsp freshly chopped parsley
  • 2 tbsp freshly chopped coriander leaves
  • 1 tbsp light sesame seeds
  • a pinch ground cumin
  • Salt
  • Cayenne pepper
  • breadcrumbs (as needed)
  • vegetable oil (for frying)
  • 4 pita breads
  • fresh coriander (for garnish)

Instructions

    Wash the cucumber and slice it. Peel, halve, and finely slice the onion. In a bowl combine the yogurt, pressed garlic, cucumber, and onion. Season with salt, pepper, stir in olive oil and dill.

    Drain the chickpeas in a sieve, rinse and let them dry well. Wash, trim, and finely chop the spring onions. Peel and finely chop the garlic. Pulse the chickpeas until fine. Mix in the spring onions, garlic, baking powder, herbs, and sesame seeds. Season with cumin, salt, and cayenne pepper. Add breadcrumbs as needed to make the dough workable. Shape into 8 patties with damp hands. Fry in hot oil for 5‑6 minutes until golden brown, then drain on paper towels.

    Slice the pita breads open and fill each with a bit of tzatziki and two falafel patties. Garnish with coriander if desired and serve.
