Ingredients
- 1 old-fashioned roll (from yesterday)
- 2 shallots
- 2 Garlic cloves
- 800 g cod fillet
- 3 eggs
- 3 tbsp breadcrumbs (more if needed)
- 3 tbsp chopped coriander
- 1 tbsp chili sauce
- Salt
- Pepper (freshly ground)
- vegetable oil (for frying)
- 100 g baby spinach (for garnish)
- chili sauce (as desired)

Soak the bread in water. Peel and finely chop the shallots and garlic. Finely chop or blend the cod fillet, then mix with the drained bread, onions, garlic, eggs, breadcrumbs, and coriander. Season with chili sauce, salt, and pepper, and knead into a homogeneous mixture. Shape small patties from the dough.

Heat oil in a non-stick pan and fry the patties in batches, browning each side for 2–3 minutes. Remove, drain on paper towels, and let cool slightly. Pinch a spinach leaf onto each patty with a toothpick and serve warm or cold with chili sauce for dipping.
