Baguette with Duck Breast

Ingredients
- 1 duck breast fillet (ca. 300 g)
- Salt
- Pepper (freshly ground)
- 2 tbsp Orange juice
- 2 tsp soy sauce
- 1 garlic clove (finely chopped)
- 1 tbsp Olive Oil
- 2 tbsp apricot jam
- 1 tsp balsamic vinegar
- Cayenne pepper
- 1 baguette (ca. 200 g)
- 2 lettuce leaves
- Orange zest (for garnish)
Instructions

Score the duck breast skin side in a diamond pattern, season both sides with salt and pepper. Mix orange juice, 1 tsp soy sauce, garlic and oil, then brush the mixture over the meat.

Sear the duck breast skin side down in a small oven‑proof pan without added fat for about 5 minutes, flip it, and finish cooking in a preheated oven at 200°C for about 10–12 minutes.

Whisk apricot jam with remaining soy sauce and balsamic vinegar, season with salt and cayenne pepper.

Slice the baguette lengthwise, spread half of the apricot sauce on each half, top with lettuce leaves. Slice the duck thinly, arrange on the bread, drizzle with the remaining apricot sauce, and garnish with orange zest if desired. Serve.
