Ingredients

  • 2 ripe avocados
  • 4 cooked shrimp
  • 1 cucumber slice (cut into strips)
  • 1 red onion (thinly sliced)
  • 1 red chili pepper (sliced into rings)
  • a handful of parsley
  • 4 basil leaves
  • Salt
  • Pepper
  • Lemon juice
  • olive oil

Instructions

    Halve the avocados and drizzle with lemon juice. Season with salt, pepper, and 2 tsp olive oil each side. Wash the parsley and remove the leaves.

    Fill the avocado halves with onions, chili, cucumber, and parsley leaves. Sprinkle with salt and pepper. Place one shrimp on top of each, drizzle with a little oil, and garnish with a basil leaf before serving.
